1 Chicken (about 3 1/2 pounds), whole

Produce

1 (2-pound) green cabbage
1/2 cup Basil, packed leaves
1/2 lb Carrots
2 tbsp Garlic
1 Garlic clove
1 2/3 tbsp Ginger
1 Lime, wedges
1/2 cup Mint, packed leaves
2/3 cup Peanuts, salted roasted
4 tsp Red chile, fresh

Condiments

1/3 cup Fish sauce, Asian
7 tbsp Lime juice, fresh

Baking & Spices

1/4 cup Brown sugar, packed light
1 tbsp Sugar

Vietnamese Chicken Salad. so good! it tastes so exotic and healthy. i changed somethings to make it vegetarian (veggie chicken strips from the store) and used only fresh red onions and garlic. no carrots. i have not yet perfected the dressing but i think you can just sub olive oil for fish sauce and keep the rest.

Thinking about this recipe for Saturday night on the couch with a beer!
