Apple Pie Salsa and Cinnamon Sugar Tortillas! Ingredients: 2 cups peeled, cored, and diced apple 2 tbsp fresh lemon juice 3 tbsp brown sugar ¼ tsp cinnamon 1 tsp cornstarch dissolved in 1 tsp water For the chips 5 (6-inch) wheat tortillas 2 tablespoons butter, melted 1/2 teaspoon cinnamon 1 1/2 tablespoons sugar Directions: Combine all the dip ingredients in a small pan except the cornstarch-water mixture. Heat for a few minutes on the stovetop until it’s boiling and has extracted juice from the apples. Then add cornstarch-water mixture to the “sauce." Put back on the stovetop until boiling and the sauce has thickened. Set aside. You can serve this warm or chilled. It doesn’t matter. It will taste delicious. For the tortillas, cut them into wedges. Lay them out in a slightly greased baking pan or cookie sheet. Brush the tortillas with butter, sprinkle with cinnamon and sugar, and bake at 410º until golden brown, about 5-8 minutes. Let them cool before serving and serve with the Apple Pie Dip

Mini apple pies - can't wait to try these and see how well they freeze, so I can treat myself to a little indulgence every now and then without the whole pie staring me in the face LOL!

I can't even imagine how this would taste! I'll have to live through the pictures. Epic Cinnamon Pie…

Apple Pie Dip & Cinnamon-Sugar Tortilla Chips. Made this for my Bunco group tonight. It went over very well and was super simple to make, especially since I used Cinnamon-Sugar Pita Chips from the grocery store vs. making my own. I also would suggest doubling the recipe if you plan on serving this to more than 6 people.

This recipe had me at "cinnamon-sugar"! Apple Pie Dip & Cinnamon-Sugar Tortilla Chips! yum!

Apple Pie Caramel Apples. I tried these and although I made a huge mess out of my kitchen in the process, they were delicious!! They tasted like the ones from Rocky Mountain Chocolate Factory. But in the recipe she said to use white chocolate...WRONG...I used white almond bark. You could also probably use the vanilla candy melts they sell in the cake decorating section of A.C.Moore, etc.

Apple Blueberry Pie Bars. Like a crumb pie in bar form - so much easier to make bars instead of a pie.
