I had a lot of fun creating this recipe and Josh declared it worthy of a bistro menu. Sweet. And...I finally wrote the blog! It's been a crazy few weeks, so thanks for the patience. I served this with roasted broccoli, which really balanced the richness of the cheese sauce. Here we go! By the way, this takes a number of pots and pans at the same time. :) Start by preparing a few strips of thick cut bacon on the stove. You'll want it crispy but not burnt. After they're ready, set aside on a paper towel and toss the bacon grease. In another pan, saute 1 small, diced yellow onion over medium high heat. After a few minutes, add 1 Tbsp of butter and 1 Tbsp of flour, and wisk! You're making the base for your cheese sauce. Once the flour mixture has cooked a bit, mix in about 1 cup of heavy cream and wisk, making sure the flour is smooth. Your cheese sauce is almost ready. Mix in a good sized brick of Serendipity cheddar - it's an easy way to get a creamy cheddar flavor, but surprise! This Wisconsin cheddar also has layers of Shaft's blue cheese, giving your pasta a nice bite. If you can't find it, buy a small chunk of blue cheese and a good quality (medium sized) creamy cheddar. Buy a 1:2 ratio. In another pot, set some lightly salted water to boil and when it's ready, cook about 1 cup of whole wheat macaroni noodles until al dente (slightly chewy, not mushy). If your sauce is looking delicious (as it should be), then season it with a little pepper - no salt needed. Now, turn the heat down and keep it warm while you prepare the rest. Wipe out the bacon pan and add about 1/2 C of Panko breadcrumbs - dry toast breadcrumbs over medium heat. Meanwhile, dice the bacon and add to the breadcrumbs. When they've gotten their color, remove from heat and the zest from 1/2 a lemon and some fresh chopped parsley. Mix the cooked pasta into the cheese mixture, making sure every piece is thoroughly coated. Top each serving with a generous portion of the breadcrumb mixture and serve! Happy eating!
