1 pound fresh ginger, peeled, sliced as thinly as possible 4 cups sugar 4 cups water pinch of salt ginger and salt in saucepan, water to cover and boil. simmer ten minutes. Drain repeat. Empty pot, add the 4 cups water with sugar and ginger slices, and cook until boiling. simmer for 20 minutes. Remove from heat and strain ginger slices out (reserving syrup). Toss the slices in sugar, shake off excess and dry on racks until cool.
Candied ginger: shave the root, cut into thin slices, boil until slightly tender, pour out 1/2 water and add the same volume of sugar as you have ginger. Boil until liquid is gone. Toss in sugar to keep pieces from stoking together and dry. Great way to enjoy all the benefits of ginger and it tastes awesome! Amazing in baked goods!
Here's how: Open a can of pinto beans, drain and place them in a blender with a teaspoon of olive oil, a clove of garlic, 1/4 jalapeno (more or less depending on heat of chili and your taste), 1/2 teaspoon of cumin. Puree in pulses until mixed well, season to taste, serve.
