    Nice & light! crisp on outside. fluffy on inside. added 1/2 c sweet rice flour in the flour mix. Next time: Cut added sugar in 1/2 and add tsp vanilla. Flour mix: 2 part rice flour (3/4 c. white rice, 3/4 c brown rice, 1/2 c. sweet rice) 1 part tapioca flour 1 part corn starch (didn't have potato starch).

    Pancake batter should have less fat and less sugar. Sugar in waffles helps carmalize the outside making it crisp while the fat makes it light.
