Gazpacho. The best gazpacho recipe I've ever found. I love it so much I make a batch at the beginning of each week and store it in the fridge for lunch or quick dinner. Serve with broiled Swiss, spinach, red onion sandwich (add avocado after removing from the oven)
America's Test Kitchen Gazpacho Recipe - absolutely the BEST gazpacho, except cut the tomato juice to three cups and omit the ice cubes to intensify it. The texture and taste are both incredible. Make it in the food processor, pulsing rather than liquefying. White wine vinegar and/or Sriracha are acceptable substitutions. Flavor gets better every day - good thing it makes a huge batch! Serve with some or all of these: shrimp, avocado, chips, sour cream, etc.
