Tomato Basil Parmesan Soup - I did this on the stove instead of in a slow cooker. I made quite a few adaptations. I roasted tomatoes with garlic instead of using canned tomatoes. Blended the mix before making the roux (for which I only used 1/4 cup butter and a 1/4 cup flour). Subbed a cup of greek yogurt for the half and half. We also made cheesy toast to go with it.
Slow Cooker Tomato Basil Parmesan Soup - one of my favorite soups ever to serve to company or on a chilly night.
Slow Cooker Tomato Basil Parmesan Soup..I made this tonight with "fancy" grilled cheese sandwiches(French bread, garlic butter, provolone-mozzarella cheese). Soup was delicious and the sandwiches were the perfect compliment. The boys have hailed me as the best cook ever ♥
Slow Cooker Tomato Basil Parmesan Soup ***Omigosh. This soup is...in a word...divine. My husband took a few bites and said, "Wow...this is restaurant soup!" It's smooth and creamy goodness. Definitely puree the onions, carrots, celery and tomatoes in the food processor so it's not too chunky. So yummy. This is one of the best things I've ever made. Love it!
