Herbs in "frozen" olive oil is one of my favorite ways to harvest. The herbs don't get dry , brown and brittle in the same way they do when they get frozen in water. They also retain their scent and flavor much more effectively!

Take a large head of garlic and cut tops off of cloves. Place each head in one compartment on a muffin tin, pour 2 tbsp olive oil on top of each head, add fresh cracked pepper and Mediterranean sea salt. Cover the muffin tin lightly with aluminum foil, bake for 1 hour at 400°F.
