On the side I ate a whole wheat English muffin topped with honey and shredded coconut. This combination has quickly become my favorite post-dinner snack the past three nights in a row. It’s sweet but satisfying at the same time.
cup pumpkin puree or sweet potato puree (cooked) 1 small ripe banana tsp baking soda cup + 1 tbsp arrowroot powder 1 tbsp coconut sugar 4 pastured eggs tsp apple cider vinegar 1 tsp pumpkin pie spice (mixture of cinnamon, nutmeg and cloves)
Healthy Pizza: Top 1 toasted whole wheat pita with c chopped tomatoes, c shredded part-skim mozzarella, c grilled chicken breast, and c chopped sun-dried tomatoes Sprinkle with minced garlic and oregano Place under oven broiler until bubbly.
Raspberry Honey Tapioca Pudding 3 cups / 710 ml milk cup / oz / 70 g small pearl tapioca 2 large egg yolks, lightly beaten tsp fine-grain sea salt cup / 80 ml mild honey (I used raspberry honey) Grated zest of 1 small lemon to 1 tsp rose water
Toddler Muffins - These lightly sweet muffins are made with bananas, squash, and carrots, and are perfect for getting veggies in at breakfast! UPDATE: this is great for toddlers- mini muffins with puréed veggies or baby food. Very healthy snack!
