I absolutely LOVE roasted vegetables. They are so easy and hands off. I've never had acorn squash, but I think this is on the menu for next week.
Spaghetti Squash Gratin - I'm going to try this with Almond milk, oat flour and Ezekiel bread crumbs
Macaroni and Cheese with Butternut Squash - The ricotta and mashed squash give this familiar dish its creaminess. I won't lie - I doubled the cheddar cheese and added a little bit more ricotta, and the result was delicious!! It does take about two hours total - so this isn't a dish to "throw together" on a weeknight!
