Raw tomato sauce made with tomatoes, basil, garlic & olive oil. Great quick meal! My version: I used a 27 oz can of diced tomatoes (drained), doubled the garlic, used dried basil instead of fresh and salted the mix. I omitted the cheese, pepper, and parsley. This would make a delicious dip for garlic bread, too! So fresh and flavorful.
Heat oven to 375. Wash and slice zucchini. Drizzle with a little olive oil. Then place zucchini slices on a cookie sheet in a single layer. Sprinkle with salt, pepper, parmesan cheese, and garlic powder. Roast uncovered in oven for 10-15 minutes or until tender.
a bag of baby carrots, a little olive oil, balsamic vinegar, black pepper and sea salt. toss to coat, roast at 450 for 20-25 mins tossing again occasionally. drizzle with a little more olive oil and serve! easy, easy side dish.

Oven-Roasted Asparagus & Mushrooms... Yum! 1 bunch Asparagus 1/2 package White Mushrooms Olive Oil Salt, Pepper, and Garlic Powder... Wash and chop asparagus into 1" pieces. Slice mushrooms. Add both vegetables to a baking dish. Lightly coat with olive oil, mixing to ensure that everything is evenly coated. Sprinkle with salt, pepper, and garlic powder. Roast at 400F for approximately 30 minutes, to desired tenderness
