PUEBLO CORN PIE Here’s a recipe I’ve made many times over the years as a Thanksgiving main dish. It’s one of my family’s favorites, so I brought it forward from Vegetarian Celebrations into Vegan Holiday Kitchen. This layered casserole of cooked cornmeal topping a tasty bean chili is adapted from a Native American recipe.
Hot Water Corn Bread: 2 cups self-rising white or yellow cornmeal 2 tablespoons flour 1 egg 1 tablespoon sugar, (optional) 1 1/2 cups hot water Vegetable oil Combine cornmeal, flour, egg, sugar and hot water in large bowl. Heat vegetable oil in skillet until hot. Place about 1 heaping tablespoon of cornmeal mixture for each bread patty in skillet.
Arepitas - these things are delicious. I make them using an arepa maker and instead of the chorizo, I bake the arepitas then slice them in half and scoop out some of the dough. Then add in my favorite brekfast foods like eggs, bacon and cheese and eat like a sandwich!
