Crock pot chicken curry - This is delicious! I added a LOT of diced carrots. We serve with basmati rice and a side of cucumber, tomato and onion salad. Diet friendly, but portion control is the real issue here :)
This slow cooker curry was AMAZING. Important note if you make it - do NOT add the coconut milk until the end. I had to throw the whole crock pot full after it curdled on my first attempt. :( But after a second try, this is going into heavy rotation.

Crock Pot Cashew Chicken from Favorite Family Recipes - really liked this! I doubled the sauce since we like things saucy and I thought it was perfect. Although we did it in the crock pot, I think that it would be just as easy to do it stove top, too, for a great weeknight dinner. Be careful not to season with extra salt because the ingredients are salty enough. Would definitely make this again!
