2 1/8 cups Red lentils
1 (28-ounce) can Tomatoes, with juice

1 Water or chicken stock

1 Black pepper, ground
1 Cayenne
1 Coriander seeds, lightly toasted and ground
1 Curry powder, hot
1 Salt

1 Canola oil or peanut oil

Dinner - 1/16/2013 - Found this after following a couple of different links from the 20 homemade soups pin. This soup was EXTREMELY easy and super yummy. As it was cooking, I was afraid it was going to be bland and boring, but not the case. I had two bowls and I'm looking forward to having leftovers for lunch. It was delicious.

red lentil coconut soup--Pinner says: I made this last night, it was delicious!! I didn't have the red peppers so I made it without them, this will definitely be hitting the regular rotation...most of the ingredients can be found in my pantry anyway, so stock up on some of the staples of this recipe and keep it in your back pocket when "there's nothing to make" But whatever you do, you have to try this soup!!!
