Chocolate Energy Superfood Bars (Recipe and image from Superfood Cuisine: Cooking with Nature’s Most Amazing Foods ) Makes 8 bars 1½ cups soft Medjool dates (about 15 or 16), pits removed ¼ cup raw almonds ¼ cup raw cashews ¼ cup cacao powder 3 tablespoons cacao nibs 6 tablespoons hemp seeds 1 tablespoon chia or flax seeds 2 teaspoons maca powder (optional – enhances nutrition) 1 teaspoon mesquite powder (optional – enhances flavor) 2 tablespoons raw nuts/seeds (use favorite kind) ¼ cup dried fruit (use favorite kind) Grind all ingredients together in a food processer—except for the last 2 tablespoons of nuts/seeds and ¼ cup of dried fruit—until a coarse dough has formed (this process may take a couple minutes). Stop the machine and check the consistency: pinch the dough between two fingers and make sure it sticks together easily so that your bars don’t end up crumbly. If the dough is too dry, add a tiny amount of water—about ½ teaspoon at a time—and blend again until the desired stickiness is achieved. Add the last 2 tablespoons of nuts/seeds and dried fruit and pulse several times until just coarsely chopped to give the bars a nice texture. Place a large sheet of plastic wrap on a flat surface and spill out the dough on top. Gather into a solid mass in the center; then use the sides of the plastic to wrap over the dough as tightly as possible, pressing, pounding, and shaping into a compact 1-inch thick rectangle. When solid, remove the wrap and cut into 8 bars. (For extra clean cuts, you can place the bars in the freezer for 30 minutes before cutting.) Wrap and keep in the freezer for long-term storage. Variation: Add hemp protein, a teaspoon of freeze-dried wheatgrass powder, or bit of chlorella to boost the protein and nutrition even further.

No-Bake Apricot Chia Energy Bars I skipped my afternoon workout yesterday and instead got home in time to make soup for dinner. More on that soup another day but I was looking forward to an evening with hubby and the little one. Then hubbys texts started rolling in that his meeting was going longer and longer and 6:30pm turned into 7pm which turned into 7:30pm. My soup had been ready for hours and so I had a small bowl to calm my hunger and wait for him. Around 7:45pm he walked in the door with a Jimmy Johns sandwich and said Im sorry Ive been working so muchthanks for taking care of everything at home. And then he proceeded to eat the soup while I enjoyed course #2 of Jimmy Johns. Swoon! We settled in to watch our beloved Illini battle it out into triple overtime with Rutgers. It was a battle of the Big 10 losers and fortunately Illinois won. Fortunately also there were not additional overtimes as it was already 30 minutes past my bedtime of 10pm. The next thing I knew it was 6:45am and Shea hadnt woken me up yet. No need to set an alarm with a toddler right? Not usually anyway. It was a mad rush to do the whole morning routine but fortunately I had made these No-Bake Apricot Chia Energy Bars last week and had them cut and individually wrapped in the fridge for these very moments. Its not every morning that Shea sits down to a breakfast fit for a queen but honestly these are just as worthy. Rich in omega 3 fatty acids theyre soft with a bit of a crunch from the chia seeds and walnuts. You can process them to your texture liking as the sticky apricots work so well in keeping these bars formed and easy to eat. They are kid-approved and perfect for a breakfast on-the-go for a healthy naturally sweet snack. Save Print No-Bake Apricot Chia Energy Bars Author:Nicole Morrissey Prep time: 10 mins Total time: 10 mins Serves:10 bars Ingredients 1 cup Medjool dates pitted 1 cup dried apricots 2 Tbsp chia seeds 1 cup walnuts cup dark chocolate chips Instructions Line a 9x9-inch square pan with wax or parchment paper. Place dates apricots and chia seeds in a food processor and process until the mixture forms a large mass. Break up slightly with a spatula add walnuts and chocolate chips and pulse until desired consistency. Press the mixture into the prepared pan. You may need a second piece of wax or parchment paper over the top to avoid your hands or spatula from sticking. Refrigerate for 30-45 minutes then slice into bars. I also used dark choc chips, craisins, and shredded coconut as mix-ins and drizzled melted chocolate over the finished bars and they turned out great! Will certainly repeat.

Hi everyone! It's Lauren from Perpetually Chic. Quick show of hands: Who is guilty of skipping breakfast? When you're dashing out the door in the morning to work, school, or to drop the off kids, breakfast can be the last thing on your mind. Yes? It happens more often than I care to admit, but these breakfast bars are my new time-saving trick. Just whip up a batch over the weekend, and you're set for the week. Keep reading for the recipe--no baking required! To be clear, these bars are packed with some healthy ingredients like raw almonds, pistachios, and dried cherries. And while they may be better for you than many store-bought granola bars, they're certainly not free of sugar. That said, they strike that just-right balance of sweet and salty, chewy and crunchy that I love in a snack... I used almonds, pistachios, dried cherries, and toasted coconut flakes for my fruit and nut mix. You can also change things up using this same basic recipe--try dried cranberries and walnuts or dried apricots and cashews instead. These bars do have a tendency to stick together, so be sure to layer parchment paper in between the cut squares when you store them. Cherry, Pistachio & Coconut Breakfast Bars Ingredients 1 1/2 cups puffed brown rice cereal (I used Kashi brand) 1 cup whole almonds 1/2 cup raw pistachios 1 cup dried cherries 1/2 cup unsweetened large coconut flakes, toasted 1 teaspoon unsalted butter, plus 2 tablespoons 1/2 cup brown rice syrup (try Whole Foods if your local grocery doesn't have it) 1/4 cup unsalted almond butter 2 tablespoons light brown sugar 1/4 teaspoon salt Instructions 1. Line an 8-inch baking pan with aluminum foil. Leave a few inches overhanging. Grease with 1 teaspoon butter. This allows easy removal later. 2. In a large bowl, combine cereal, nuts, cherries and coconut flakes. 3. Heat a saucepan over medium heat. Stir together brown rice syrup, almond butter, brown sugar, salt and 2 tablespoons of butter. Mix until smooth, allowing to simmer and cook just a minute. 4. Immediately pour the hot mixture into the bowl with the cereal mixture. Use a wooden spoon to mix everything until evenly coated. 5. Pour the mixture into the pan. Press the mixture evenly with your hands. It will be very sticky! Refrigerate the bars in the pan about 1 hour to set. 6. Lift the foil to remove the bars from the pan and transfer to a cutting board. Using a sharp knife, cut the bars into 2-inch squares (small bars). 7. Place the bars in an airtight container with sheets of parchment paper in between each layer of bars. Store in the refrigerator for a week. *Recipe and images by Lauren Craig
