Mojito with Pineapple Rum - •3 tbsp. sugar • ¾ cup pineapple rum • ¼ cup simple syrup • ½ cup fresh lime juice (from about 4 limes) • ½ cup club soda, or to taste • 4 lime wheels, for garnish • 4 mint sprigs, for garnish
Pineapple Vanilla Mojito 2 oz light or silver rum (Cruzan Vanilla or 10 Cane rum are good choices) 1 oz lime juice 1 oz simple syrup Few drops of vanilla extract 0.25 cup chopped pineapple Garnish: pineapple wedge + mint sprig In a cocktail shaker, muddle pineapple and mint with lime juice, simple syrup and vanilla extract. Add rum. Top with ice and shake vigorously. Strain into an iced cocktail glass. Garnish and serve.
