    Spicy Peanut Portobello Kale Rice Bowl 4 c. cooked brown rice 4 c. Kale 2 lg. portobello mushrooms, sliced into thin strips 1/2 c. sweet onion, sliced 1 tsp soy sauce 2 tsp safflower oil 2 Tbsp whole roasted peanuts 1/4 c. fresh cilantro, lightly chopped 1. Prepare Kale. Set aside. Cook brown rice 2. In a skillet, high heat, add oil. When hot, sauté mushrooms onions. Add soy sauce (S/P to taste). 3. Pan still hot, add kale salad. Turn off heat and let sit. 4. Serve warm over rice
