Lasagna Soup » a farmgirl's dabbles. Yummy and filling, but a little greasy - maybe next time I'll use part lean ground beef or turkey with part Italian sausage. Also, I couldn't find mafalda or fusilli pasta, so I used egg noodles.

Lasagna soup...sounds yummy!
a few weeks ago i made this soup and then quickly rushed off to a meeting- during the meeting i received the following text: Lasagna Soup recipe via a farm girl's dabbles ~image via a farm girl's dabbles~ INGREDIENTS for the soup: 2 tsp. olive oil 1-1/2 lbs. Italian sausage 3 c. chopped onions 4 garlic cloves, minced 2 tsp. dried oregano 1/2 tsp. crushed red pepper flakes-if you don't like a kick, you might want to leave this out--we love it in our fam! 2 T. tomato paste 1 28-oz. can fire roasted diced tomatoes 2 bay leaves 6 c. chicken stock 8 oz. mafalda or fusilli pasta 1/2 c. finely chopped fresh basil leaves salt and freshly ground black pepper, to taste for the cheesy yum: (this makes the dish!) 8 oz. ricotta 1/2 c. grated Parmesan cheese 1/4 tsp. salt pinch of freshly ground pepper 2 c. shredded mozzarella cheese PREPARATION Heat olive oil in a large pot over medium heat. Add sausage, breaking up into bite sized pieces, and brown for about 5 minutes. Add onions and cook until softened, about 6 minutes. Add garlic, oregano, and red pepper flakes. Cook for 1 minute. Add tomato paste and stir well to incorporate. Cook for 3 to 4 minutes, or until the tomato paste turns a rusty brown color. Add diced tomatoes, bay leaves, and chicken stock. Stir to combine. Bring to a boil and then reduce heat and simmer for 30 minutes. Add uncooked pasta and cook until al dente. Do not over cook or let soup simmer for a long period of time at this point, as the pasta will get mushy and absorb all the soup broth. You may even want to consider cooking the noodles separately, and then adding some to individual bowls before ladling the soup over them. This would be an especially smart move if you are anticipating any leftovers. Right before serving, stir in the basil and season to taste with salt and freshly ground black pepper. While the pasta is cooking, prepare the cheesy yum. In a small bowl, combine the ricotta, Parmesan, salt, and pepper. To serve, place a dollop of the cheesy yum in each soup bowl, sprinkle some of the mozzarella on top and ladle the hot soup over the cheese. Servings: 8

We cooked the tortellini separately so it didn't get soggy and so non-dairy eaters could still eat the soup. We didn't make the bruschetta, but it was excellent with focaccia bread. Had no stock--used water. Put in a a whole container of fresh spinach (6 oz.))

The Country Cook: Lasagna Soup. I did not follow this recipe. I browned ground beef with onions, added garlic powder, water, powdered chicken bouillon, two chopped zuchhini, and half a jar of prepared spaghetti sauce. I left out the noodles for gluten-free people, and it was delicious. You can cook the noodles separately and let people add them. It was so easy and delicious!

Panera Potato soup (with cream cheese) - Easy and oh so good! Our family favorite for a cold winter day! **all you need is: potatoes, a small onion, chicken broth, (cayenne) red pepper, white pepper & salt and cream cheese.
Panera's Cream Cheese Potato Soup: Even though I think potato soup is the nasty, I find myself making this recipe often! This is Josh's absolute favorite dish! I add extra red pepper to his liking. We had Panera Bread last week and he informed me that my potato soup is much better than theirs (even though they're similar). But you know how husbands are...
Panera s Cream Cheese Potato Soup from Food.com: This is my favorite recipe for potato soup. It's a copycat of the Panera Bread soup.
I came across this recipe a few months ago and it has been a staple in my house ever since. It tastes just like Panera Bread's Potato Soup and is so easy to make. We add shredded cheese, pieces of bacon and scallions as a topper. You must try it....it is the best potato soup recipe I have ever come across. Believe me I have tried a bunch! 4 cups chicken broth 4 cups peeled and cubed potatoes 1/4 cup minced onion 1/2 teaspoon seasoning salt 1/4 teaspoon white pepper 1/4 teaspoon ground red pepper 1 (8 ounce) package cream cheese, cut into chunks Directions: 1 Combine broth, potatoes, onion, and spices. 2 Boil on medium heat until potatoes are tender. 3 Smash a few of the potatoes to release their starch for thickening. 4 Reduce to low heat. 5 Add cream cheese. 6 Heat, stirring frequently, until cheese melts. All in All: This recipe is yummy and cheap! Serve along side your favorite sandwich and you have a great meal! Can't beat that!
