QUINOA SALAD (serves 1/532 cal): 1/2 cup quinoa, 1 cup water, 1 bunch flat-leaf parsley-washed-chopped-thick stems removed, 4 persian cucumbers-peeled in strips-seeded-diced, 2 med diced tomatoes, 1 ripe slightly firm diced avocado, 2 or 3 tbsp evoo, Salt and pepper to taste.
