Roasted Broccoli - Preheat oven to 425. Cut 2 large bunches of broccoli into florets & place in a bowl. Add S & P, 4 thinly sliced cloves garlic, drizzle with olive oil & toss to coat. Line a cookie sheet with aluminum foil, pour on broccoli & roast for 20-25 minutes til broccoli is tender and a bit brown at edges. Remove the pan from the oven, sprinkle on 1 T parmesan cheese, a good squeeze of lemon and 1 t. lemon zest and a little more olive oil on top, toss and enjoy.
