Corn, Avocado & Black Bean Salad-SO good! I use a little over 2 Tbsp lemon juice & 1 tsp cumin. Served w/ tortilla chips to feed a large group!

We don’t use zucchini too often, and our corn is normally eaten off the cob, so this recipe has been a nice transition from most things we see in the kitchen. This Parmesan zucchini and corn medley is the delectable answer to all your side dish problems.
