Busy Mom Puffins (Pancake Muffins)  (for my 20 year old griddle that's about to die....make 12 premeasured pancakes @ a time.    Use Pampered Chef large scoop to dispense!  Preheat oven to 350, pour pancake mix (my own FF recipes; plain & fruit) in a greased muffin pan or liners.  Bake for 12-14 minutes and serve.  Easy & fast! ~Barbie

Toast 8 English-muffin halves and place on a cookie sheet. Drizzle each with olive oil, then layer on tomato slices, hard-cooked egg slices (1/2 an egg each), and a little grated mozzarella. Healthy Breakfast Recipes | 10 healthy breakfast recipes | I made the Oatmeal Baked Casserole. Delicious! I did swap a few ingredients to suit my taste buds. Also, my cook time was 55 minutes, not 35-40 minutes. I'm wondering if it's because I used coconut oil instead of butter?
