Grilled Zucchini Rollatini with Sun-Dried Tomatoes and Goat Cheese...these were great! I roasted the zucchini instead of grilling it. Make sure you cut them at least 1/4 inch thick because they shrink in the oven. Between the goat cheese and parmesan, it's kind of salty so don't add additional salt.
