Avocado Feta Salsa 2 plum tomatoes, chopped 2 ripe avocado - chopped,1/4 c chopped red onion,1 clove garlic, minced,1/3 c. chopped cilantro,1 T olive oil,1 T red or white wine vinegar,4 oz crumbled feta cheese, lemon,salt & pepper to taste.In bowl, gently stir together tomatoes, avocados, onion & garlic. squirt some lemon juice on it to keep avocados from browning quickly. Mix in cilantro,olive oil,vinegar & feta. Salt & pepper to taste. Cover, & chill for a hr.
