      Sour Cream Chicken Enchiladas! 12 corn tortillas, softened, 1C cooked boneless chicken breast, 1- can cream of chicken soup, 8 oz. Sour Cream, 1- 4 oz can green chilies & 1/2 t salt. Combine all ingredients & heat until warm. 8 oz cheddar, grated, 1/2 C scallions. Pour 1/2 C sauce in 11" x 7" pan. Put 2T sauce in each tortilla & 1 T cheese. Pour remaining sauce on top. Top enchiladas w/ more cheese & chopped scallions. Bake at 350 for 35 minutes.

      Sour Cream Chicken Enchiladas Recipe I used light sour cream, 2% cheese and corn tortillas and this was WONDERFUL. I Cooked the tortillas in a nonstick pan with Pam for about a minute per side. This keeps the tortillas for getting soggy. I will be making this over and over
