    Alton Brown Buffalo Wings -24 chicken wings (3Ib) -3oz (6tbs) unsalted butter -1 small clove garlic, minced -1/4c hot sauce -Kosher salt ~Boil some water with steamer basket on high. Steam wings on med h for 10mins. Remove a pat dry. Lay on rack over sheet pan with paper towel & place in fridge to dry for 1hr. Preheat oven 425F. Remove Paper towels & place parchment paper. Place in center rack bake for 20min. Turn & bake 20-30min. Mix butter, garlic, hot sauce & 1/2tsp salt. Remove wings & coat
