Healthy Snack: Gluten-Free Quinoa Pizza Bites. The kids loved these. The quinoa gives you the same satisfaction as a wheat crust, and you can choose whatever ingredients you'd normally put on your pizzas. Our family favorite: shallots, prosciutto, arugula, fresh basil, red chili pepper, lots of garlic.

Pepperoni pizza bites. Made a cheap and easy version with 2 bags of Trader Joes premade herbed pizza dough (stretched out on floured surface and cut into 2" pieces), string cheese cut into 1" pieces, and turkey pepperoni. Brushed with oil and topped with grated parm. Have some marinara for dipping too. Prep time 20 min, cook time 25 min. Total cost ~$11.

Quinoa Pizza Bites- made these into patties on the stove and they turned out great!

Quinoa pizza bites 2 cups cooked quinoa 2 large eggs 1 cup chopped onion 1 cup shredded mozzarella cheese 2 tsp minced garlic 1/2 cup fresh basil, chopped 1 cup chopped pepperoni slices (~1/2 of a 7 oz bag) 1/2 tsp seasoning salt 1 tsp paprika 1 tsp dried crushed oregano 1. Preheat oven to 350 degrees. 2. Mix together ingredients 3. Distribute in greased mini muffin tin, filling each cup to the top (1 heaping Tbs each), press down gently to compact. 4. Bake15-20 minutes.

Gluten-Free Quinoa Pizza Bites - these were surprisingly delicious! Quinoa is hit or miss for us, but we will be making these quite a bit.

Mini Pizza Quinoa Bites-----2 cups cooked quinoa, cooled 2 whole eggs 2 egg whites 2 cups chopped pizza toppings 1 cup shredded mozzarella cheese 1/4 grated parmesan cheese 1 teaspoon Italian seasoning Pizza sauce Oven to 350 degrees, spray a 24-cup mini muffin tin VERY well with nonstick spray.Mix all ingredients except pizza sauce. Fill mini muffin tin cups place on prepared baking sheet and bake for 15-20 minutes, or until golden brown.. Serve with pizza sauce.
