    Blueberry Breakfast Casserole vegan ingredients: ½ cup Earth Balance, room temp 2 tsp. lemon zest or more — zest from 1 large lemon 3/4 c + 1 tablespoon sugar* 1 flax egg or 1 ripe medium banana 1 tsp. vanilla 2 cups flour 2 tsp. baking powder 1 tsp. kosher salt 2 cups fresh blueberries 1/2 cup soy buttermilk** * This 1 TBS is for sprinkling on top ** 1 TBS vinegar + soy milk to make 1/2 cup, stir and allow to curdle Personally, I'll only use 1/2 cup sugar and add some agave if it needs it.

    Blueberry coffee cake -substituted orange zest for the lemon zest!!! Tastes like Christmas Morning!!!

    BUTTERMILK BLUEBERRY BREAKFAST CAKE. This was a good coffee cake, though I would use less lemon zest next time. It wasn't remarkable, but definitely a hit with the family.
