Corn and Cotija Guacamole (aka Esquites Guacamole)
Corn and Feta Guacamole. I skipped the onion and used coconut oil in stead of butter. This was good, but we couldn't taste the feta much. Add more if you're trying this recipe because of your deep love of feta.
