IP Zucchini Tots 1 c. Zucchini, Grated 1 Egg ¼ c. shaved cauliflower 1 IP packet of Garlic Herb Chips (crushed) Sliced green onion Salt/Pepper/Spices Add crumbled/chopped lean meats as 1. Preheat oven to 400ºF. Spray a mini-muffin tin with nonstick spray, set aside. 2. Grate the zucchini. Place it in a dish towel squeeze out the excess water 3. Combine ingredients 4. Fill the muffin cups to the top. 5. Spray tops of tots with nonstick spray 6. Bake for 15-18 minutes
Oven at 300*, cook for 30-40min. Toss thickly sliced zucchini in olive oil. In another bowl, combine parmesan cheese, bread crumbs, and a few turns of pepper. Coat zucchini, bake until browned & crisp. Serve hot! For salt and vinegar, soak slices in vinegar for 1hr and sprinkle with salt. Chipotle powder or curry powder for other flavors.
