    This is delicious. I made this last year with gluten free stuffing mix from Whole Foods (instead of cubing and toasting bread myself). I also used gluten free chicken stock from Williams Sonoma (delicious). I used gluten free sage pork sausage, instead of mild, just for some added flavor. Whole Foods, Trader Joes and William Sonoma should have the chestnuts already prepared, so they are soft and easy to chop. It was really easy to prepare, once you have all the ingredients. Sausage, Chestnut, and Mushroom stuffing (Williams-Sonoma) - I use cornbread crumbs for flavor and texture, and add 1-2 cups of a quick brown sauce (dark roux, sauce espagnole, etc.) to bind it. Hint: bake stuffing in muffin tins instead of a large casserole dish - more surface area, so cooks more quickly and with almost no sogginess in the middle!
