      Made this Sausage, Corn Bread and Chestnut Dressing Recipe from for Thanksgiving 2013. Next time I'd cut down the sausage to 3/4 lb., add a little more broth to make it moister, and change out the chestnuts for pecans.

      Sausage, Cornbread & Chestnut Stuffing ~ 8 C cubed day-old corn bread, 2 C cubed day-old bread, 1 1/2 lb mild Italian pork sausage, 1 to 2 T oil, 1 yellow onion, 1 celery stalk, salt & pepper, 1 C roasted chestnuts, 1/4 C mixed sage, rosemary & thyme, 3 C chicken stock. Toast bread 20 min @ 375F; cook sausage; saute onion & celery in sausage fat w/oil if needed; mix all ingredients & bake covered for 35-40 min then uncovered for 35-40 min @ 375F. Serves 10-12.
