Salmon Salad A delicious dish that’s perfect for Summer season Cut any large potatoes in half. Bring a pan salted water to boil add potatoes. Bring back to boil simmer for 15 mins til nicely cooked. Meanwhile, make your dressing by mixing yogurt with lemon zest & juice, a good pinch salt & pepper & glug of extra virgin olive oil. Drain the potatoes well, tip into bowl season immediately w/ salt & pepper Drizzle with olive oil & after 5 mins stir in most of dressing. Let potatoes to cool.
