I have finally found a way to do it! I've made 1000 Island dressing that is completely vegan, oil-free, and nutritarian! I am a very happy camper right now. Here is one of my new favorite salad dressings, hope you enjoy! Vegan 1000 Island Dressing Ingredients: 1/2 cup unsweetened alternative milk (more to thin) 1 cup raw cashews 2 Tbsp balsamic vinegar 2 Tbsp fresh lemon juice (about 1 lemon) 10-15 dill pickle chips (more or less to taste) 1 tsp onion powder 1/2 tsp garlic powder 2 Tbsp tomato paste 1 Tbsp date sugar (or 1-2 pitted dates) 1/4 cucumber, peeled 1/4 cucumber, peeled and finely chopped 1/4 small red onion, finely chopped 1-3 radishes, finely chopped Directions: In a medium sized bowl, heat two cups of water in a microwave until steaming. Place the raw cashews into the steaming water and allow to sit for 10-20 minutes. Drain. In a blender combine the soaked and drained cashews, alternative milk, balsamic vinegar, lemon juice, pickles, onion powder, garlic powder, tomato paste, date sugar, and the 1/4 peeled cucumber. Blend until smooth and creamy. Add more dill pickles for more zing, and add more alternative milk to acquire the consistency you desire. Scoop the blended dressing into a medium sized bowl. Add the finely chopped vegetables and stir well. Store the dressing in an airtight container in the fridge. Amy's Notes: I adapted this recipe from the 1000 Island dressing found in Dr. Fuhrman's book Eat to Live. I've been loving this salad dressing all week, so I decided to make a large batch (what the recipe above will make). I would suggest that you make half of the recipe before you make the larger one. Soaking the cashews in hot water softens them up a bit to blend better in the blender. You can also replace the cashews with 1/2 cup of cashew butter. One of my old SAD (Standard American Diet) favorites used to be a big savory Rueban with sauerkraut, rye bread, and corned beef. Oh, and of course, dripping with 1000 Island. I think I feel a Vegan Rueban recipe coming soon... :) What salad dressings are your favorite? Are there any salad dressings you used to love that you'd like to try to "Nutritarian-ize"?

World Wednesday again! For me, Mediterranean food reminds me of three things: tomatoes, olives, and olive oil. The recipe I made today has two of those three ingredients. Can you guess which ones? Yep, this recipe has no added oil. The only small amount of oil that goes into this bean salad is what comes in the 2 Tablespoons of Italian Dressing. Today, I made Mediterranean Garbonzo Salad from Whole Foods Market. Before this recipe I had never had zucchini or yellow squash uncooked, but I have to say I prefer it this way. I find that then I use them in stir fries they become too squishy and almost rubbery on the edges. In this salad they are cut fairly thin and add a nice crunch to the recipe. Mediterranean Garbanzo Salad Ingredients: 12 grape tomatoes, halved 1 small zucchini, halved lengthwise and thinly sliced 1 small yellow squash, halved lengthwise and thinly sliced 1 can garbanzo beans/chickpeas, drained and rinsed 10 black olives, halved 1/4 c fresh parsley, roughly chopped 2 T light Italian Dressing 1 T lemon juice ground black pepper to taste chopped romaine lettuce Directions: Combine all ingredients in a large bowl and mix well. Top servings of chopped lettuce with bean mixture. Enjoy! Amy's notes: In my recipe I doubled the original and added more olives and tomatoes, with less lemon juice. This could be a great dish to serve as a side salad or for the main meal. My recipe will serve 4-6 people depending on serving size. What is your favorite Mediterranean dish? Well it has been quite some time since I posted, and I'm sorry for my delay on telling everyone about my adventures with cauliflower pizza. As I said in my last post, one weekend when I visited my parents in my hometown we tried making pizza with cauliflower crust. The crust turned out great, and the toppings even better! However, the recipe we used for the cauliflower crust pizza had quite a bit of cheese in it (approximately 1/2 c per serving), so I decided to try to make a more nutritarian-friendly cauliflower pizza crust. I tried using silkened tofu as my hold-together ingredient to replace the cheese, and replaced the egg that the original recipe called for with a flax egg. My recipe did not turn out so great. It wouldn't spread across the pan very easily, so it was thicker than the original cheese one and turned out more like a casserole than a pizza. Oh well, I still ate it because the toppings are downright delicious! If you would like a vegan cauliflower crust recipe that looks a little more successful than mine, try Happy Go Lucky Vegan's cauliflower crust. I'll be using her recipe next time I give it a try. If cauliflower crust doesn't seem like your thing, stick with a whole wheat pita or other pizza crust and load it up with healthy plant-strong toppings! Here is my favorite topping combo (and pictures of the original cauliflower crust). Greek Pizza (serves 4) Ingredients: Pesto: 3 c fresh packed basil 1 c walnuts, unsalted 1/2 c almond milk 2 cloves garlic 1/2 t white pepper 1/2 t black pepper salt to taste Toppings: 1 can artichoke hearts, canned in water 1/4 c kalamata olives, pitted and chopped 1/4 red onion, thinly chopped several mushrooms, roughly chopped Directions: Prepare and bake the crust as specified by your recipe. In a food processor, combine the ingredients for the pesto sauce and process until creamy and smooth. Smear the pesto onto the pizza crust and pile on the toppings. Broil on high for 10-15 minutes, or until the toppings begin to brown. Allow to cool, serve, and enjoy!
