    2 minute pumpkin pie for one. And only 75 calories! 1/2 cup Pumpkin Puree, 1/4 cup Egg Whites, Sweetener, Cinnamon or Pumpkin Pie Spice. Mix together all the ingredients. If you prefer a flan-like texture, add more pumpkin; if you prefer a cake-like texture, add more egg whites. Microwave for two minutes. Use a mix of Greek yogurt, hazelnut cream cheese, and pumpkin pie spice for the icing.

    I always seem to have extra pumpkin after opening a can for a recipe...this Two-Minute Pumpkin Pie recipe could be the solution to those remainders...1/2 C pumpkin, 1/4 C egg whites, sweetener, cinnamon...mix and microwave...top with hazelnut cream cheese. Yum.

The Two Minute Pumpkin Pie (Paleo) - 3 tbs almond meal (or coconut flour) - 2 tbs coconut oil - 1 egg - 1/2 cup organic pumpkin puree - 1 tsp pumpkin spice - 1 tbsp honey - 1 tsp vanilla extract - a dash of salt - 1/2 tsp baking powder Place in a mug or a small microwave safe dish and microwave for 2 minutes.

3 Ingredient Pumpkin Spice Cookies: Ingredients - 1 box spice cake mix. 1 can pumpkin. 1 cup (or so) chocolate chips. Instructions - Combine all three ingredients in a large bowl and mix well. Scoop onto a greased baking sheet and bake at 350 degrees for approximately 20 minutes... YUM. A must try!
