Baked Chicken and Spinach Flautas recipe: Baked flautas stuffed with seasoned, shredded chicken, spinach, and cheese are crispy, but don’t have the greasiness of fried versions. To shred poached chicken easily, put it into the bowl of a stand mixer fitted with the paddle attachment and mix on medium for 45 seconds. Store-bought rotisserie chicken can be substituted for the poached chicken to save time.

Put 1 Tbsp in each muffin tin, add filling, top with another Tbsp of base & bake at 375* for 25-30 mins. You can freeze them sealed in freezer bags too. Then just pop them in the microwave for meals on the go or after school snacks. And let’s not forget about breakfast, a little egg and bacon and you’re set.

By now you have probably figured out that I cook chicken a lot.  And I do.  Well, I try to cook at least one chicken dish a week.   Chicken is just so easy and so versatile!  I love that you can make it so many ways.    Plus, it's pretty inexpensive.   I usually buy the big bags of frozen, boneless, skinless chicken breasts.  I love these because they allow me to pretty much always have chicken on hand but since it's frozen I don't have to worry about it going bad if my week gets crazy and I don't get it cooked as I had planned.  (Yes, this happens.  A lot.) This chicken recipe is really tasty and another one that my whole family loves!  Dipping the chicken in the olive oil/garlic mixture really gives it a lot more flavor than just dipping it in egg.  It's super easy and fast to make too.  I serve it with either rice, potatoes or noodles and some sort of vegetable.    Please excuse my lack of photos in this post.  I haven't made this recently enough to have pics, but wanted to share it with you! Baked Creamy Chicken Taquitos - These were pretty tasty. I tried the mixture with corn tortillas and flour tortillas (the heat and serve ones from Costco). Baking the corn tortillas doesn't work very well. You have to fry them quickly in oil first and that sort of defeats the purpose of healthy baked taquitos. The Costco flour tortillas work very, very well. These were a family favorite when dipped in homemade guacamole.

VERYGOOD! Chunks of all white meat chicken breasts coated in breadcrumbs and parmesan cheese then baked until golden. An easy chicken recipe your whole family will love. What can be more kid friendly than chicken nuggets, even the pickiest kids like them. Serve them with ketchup, bbq sauce or whatever you like to dip your nuggets into. Adults can serve them over your favorite salad for a satisfying lunch. Kids love finger foods or anything you can eat with toothpicks so when my daughter was young I would make her a dish of bite sized goodies she liked such as tomatoes, olives, pasta, etc. and served them with toothpicks and she always cleaned her plate! Give it a try, your kids will be so excited! Once I'm in breading mode I usually make breaded zucchini sticks as well and bake them all at the same time along with some pasta and a salad for a complete meal. Double these for more or make half for less servings.

Since having my sweet baby four months ago, I've been trying to lose the baby weight.  Most of it has come off with breastfeeding and working out but I'm struggling with the last five pounds.  It's hard because I love food so I've been trying to find some healthy alternatives.  First recipe to try was a success - healthy chicken nuggets.  They taste great and the panko was a great trick.  Perfect for a football Sunday.  Thanks to Gina's Skinny Recipes for the recipe. Healthy Baked Chicken Nuggets Gina's Weight Watcher Recipes Servings: 4 • Serving Size: 1/4th of nuggets • Old Points: 4 pts • Points+: 4 pts Calories: 164.9 • Fat: 4.6 g • Protein: 22.1 g • Carb: 7.7 g • Fiber: 0.9 g • Sugar: 0.1 g 16 oz (2 large) skinless boneless chicken breasts, cut into even bit sized pieces salt and pepper to taste 2 tsp olive oil 6 tbsp whole wheat Italian seasoned breadcrumbs 2 tbsp panko 2 tbsp grated Parmesan cheese olive oil spray  Preheat oven to 425°. Spray a baking sheet with olive oil spray. Put the olive oil in one bowl and the breadcrumbs, panko and parmesan cheese in another. Season chicken with salt and pepper, then put in the bowl with the olive oil and mix well so the olive oil evenly coats all of the chicken. Put a few chunks of chicken at a time into the breadcrumb mixture to coat, then on the baking sheet. Lightly spray the top with olive oil spray then bake 8 - 10 minutes. Turn over then cook another 4 - 5 minutes or until cooked though.

Baked Chicken Fajitas: I always prefer to cover my chicken dishes with foil while baking. It comes out super juicy and flavorful, never dry.

TRIED IT: Oven Baked Chicken Fajitas : two bell peppers, half of a large onion, and chicken breasts- all cut into strips- place in a greased 9x13. Mix 2 tbsp of oil with a packet of oretega fajita seasoning and a shake each of chipotle powder and chili powder. Pour the mixture over the chicken and veggies, stir to coat, and bake at 400 for 20-30 mins or until veggies are done to your liking.

Crockpot Lemon Chicken - Put 1 Stick of butter in bottom of crock pot. Lay chicken in pot. Sprinkle Italian dressing packet over chicken, drizzle with lemon juice, pop the lid on. Cook on High 4-5 hours, or Low 6-8 hours.

Not a lot of time this weekend for the kitchen...here's a super easy lemon chicken recipe that we love.  You can prepare it on the stove or in the crock pot... The recipe is from The Queen Bee's Hive...lot's of fun stuff on her blog. Lemon Chicken Melt 1 cube butter in fry pan. Layer on 4 Chicken Breasts, or Chicken Tenders. Sprinkle with 1 pkg. Italian Seasonings Salad Dressing Mix Add juice of 2 lemons. Cook until tender. Put the lid on at first, then take off at the end in order to brown and absorb seasonings. Can be done in crock pot. (For chicken breast:  Cook on Hi: 4-5 hours, on Low:  6-8 hours.  When finished cooking, take out, shred chicken with 2 forks, and ladle on the juices. Thanksgiving is at my house...so I'm starting to play with table setting ideas... Definitely going with simple and and natural... I would add pumpkins and moss into this arrangement.   Love the apple candles, but would just loosen this up a bit. Love the mixed elements here and the addition of the pheasant feathers.  I have a box full of those... The colors in this arrangement are beautiful and would be perfect in my dining room...  It's great to get a heads up going in my mind, to take the last minute pressure off.
