    Pan Roasted Salmon with brown sugar, cumin and mustard. MMmmm! From asweetpeachef.com. 4 6-oz. salmon fillets, skinned 1 tbsp. olive oil 2 tbsp. brown sugar 2 tsp. kosher salt 1 tsp. ground black pepper ½ tsp. ground cumin ¼ tsp. dry mustard 1/8 tsp. ground cinnamon -- combine sugar and spices, rub on salmon fillets. Sear in oil spice side down. Flip after around 2 min. Roast in 350 degree oven until flakey - about 5 min more.
