Slow Cooker Jambalaya Ingredients: 2 pounds boneless, skinless chicken thighs 1 pound smoked sausage cut into 2-inch slices (I use 1 small link of chorizo spanish sausage) 1 large onion, chopped 1 large green bell pepper, seeded and chopped 3 stalks celery, chopped 1 (28 oz.) can diced tomatoes with juice 3 cloves garlic, chopped 2 cups chicken broth 1 tablespoon Cajun or Creole spice mix 1 teaspoon dried thyme 1 teaspoon dried oregano 1 pound extra large shrimp, peeled and deveined 1 3/4 cups long-grain rice Parsley, optional Preparation: Combine chicken, sausage, onion, green pepper, celery, tomatoes, garlic, chicken broth, spice mix, thyme and oregano in a large (5-quart) slow cooker. Cook on low for 5 hours. Add shrimp and rice; raise heat to high and cook for 30 minutes more. Sprinkle with chopped parsley, if desired.

Grilled chicken doesn't have to be boring, top it with sauteed spinach with garlic, mozzarella cheese and roasted peppers and you have a quick and easy chicken dish your family will love! This is perfect for any busy weeknight; serve with pasta or a simple salad for a low carb meal. On hot days, no need to turn your oven on, you can do this all on the gas grill, put the chicken back in the bbq with indirect heat until the cheese melts. I used homemade roasted peppers for this but jarred peppers would work perfectly fine. This makes great leftovers for lunch the next day! Grilled Chicken with Spinach and Melted Mozzarella Gina's Weight Watcher Recipes Servings: 6 • S Size: 1 cutlet, spinach, cheese • Old Points: 4 pts • Points+: 4 pts Calories: 153.3 • Fat: 4.2 g • Protein: 24.5 g • Carb: 4.0 g • Fiber: 1.3 g • Sugar: .7 g 24 oz (3 large) chicken breasts sliced in half lengthwise to make 6 cutlets salt and pepper to taste 1 tsp olive oil 3 cloves garlic, crushed 10 oz frozen spinach, drained 3 oz shredded part skim mozzarella 1 roasted red pepper, sliced in strips olive oil spray Preheat oven to 400°. Season chicken with salt and pepper. Lightly spray a grill with oil (I used my George Forman) or grill outside on a gas grill. Cook chicken on the grill until no longer pink, careful not to overcook or you'll have dry chicken. Meanwhile, heat a sauté pan on medium heat. Add oil and garlic, sauté a few seconds, add spinach, salt and pepper. Cook a few minutes until heated through. When chicken is done, lay on a baking sheet lined with foil or parchment for easy clean-up. Divide spinach evenly between the 6 pieces and place on top. Top each with half oz mozzarella, then slices of roasted pepper and bake until melted, about 6-8 minutes.

Brisket ◦3 lb brisket ◦Salt ◦Ground black pepper ◦1 Tbsp chili powder ◦3 cloves garlic, minced ◦16 oz Dublin Dr. Pepper (made with real sugar) Mango Barbecue Sauce ◦1 1/2 Tbsp olive oil ◦1 medium yellow onion, chopped (about 3/4 – 1 cup) ◦1/2 cup ketchup ◦2 Tbsp lemon juice ◦1 1/2 Tbsp Worcestershire sauce ◦1 1/2 tsp Creole (spicy brown) mustard ◦Salt ◦Pepper ◦1/4 cup mango chutney Quesadillas ◦8 8-in flour tortillas ◦8 oz brie, thinly sliced ◦1 cup monterrey jack, shredded ◦olive oil or cooking spray, to brush tortillas ◦cilantro, for garnish (optional) Instructions 1.To make the brisket: Rub the meat with salt, pepper, chili powder, and garlic. 2.Place brisket in the crockpot and pour the Dr. Pepper over the top. 3.Cook on low for 8 hours. 4.Remove from the crockpot and let rest for 15 minutes. 5.Slice against the grain (1/8-1/4 inch thick). 6.To make the barbecue sauce: Heat olive oil in a 2-qt sauce pan. 7.Saute onions for 5 minutes. 8.Add garlic and cook until fragrant. 9.Stir in the remaining ingredients and simmer for 5 minutes. 10.Transfer to a blender or food processor and run until smooth. 11.To assemble the quesadillas: Heat a griddle or large pan over medium-high. 12.Lay out the tortillas. Divide the meat, brie, and monterrey jack between the tortillas, placing the meat and cheese on half of the tortilla. 13.Top with a spoonful or two of barbecue sauce and fold the other half over. 14.Place on the heated grill (brushing the tortilla with oil or cooking spray will prevent sticking). 15.Cook until the bottom is crisp and flip over. 16.Remove from heat and slice into thirds. Serve with extra barbecue sauce.
