Roasted Okra, this was fantastic!!!!! I roasted it at 425 for close to 30 minutes, since I used frozen okra, stirred it half way through and then sprinkled with more salt before serving, seriously could eat this like popcorn! My husband loved it too, and he doesn't like okra.
Put the broccoli on a cookie sheet. Toss with olive oil, salt and pepper. (She says 5 Tbs olive oil, 1 1/2 tsps kosher salt, 1/2 tsp fresh ground pepper, but I just eyeballed it.) Now add 4 garlic cloves that are peeled and sliced and toss them in too.Roast in the oven 20 to 25 minutes @425, until “crisp-tender and the tips of some of the florets are browned.” add lemon zest & juice, parm cheese, and serve
Bacon Wrapped Asparagus Preheat oven to 400 Divide asparagus into bundes of 3-4 spears Wrap each in a slice of bacon In a saucepan, melt a stick of butter, 1/2 c. brown sugar, 1Tbspn soy sauce, 1/2tsp garlic salt, and 1/4 tsp black pepper and bring to a boil. Pour mix over bundles and bake until bacon looks done.
