Slice potato almost but not all the way through. Tuck butter between slices. Bake until tender. Dribble with sour cream. Shower with grated cheese. Bake again until melted and gooey. Lavish with more sour cream and chopped scallion or chili or whatever you please.
crispy baked potato skins Bake whole @ 425 until soft. Let cool enough to handle, then cut in half and scoop out potato. Brush skins with oil, and bake @ 475 for 12-15 minutes (skin side up) until crispy. Flip over, lightly salt/pepper and fill with cheese & bacon and bake for another 2+ minutes until cheese is melted. Top with sour cream & scallions.
There are several methods to baking a potato, but this is my favorite because the potato skin is crispy and salty and the insides are soft and fluffy. - Also saw Alton Brown do this method. It works great! No more bland potatoes!
Outback Style Baked Potato: Wash and pat dry potatoes. Pierce each side two or three times with fork. Brush the potato skin with olive oil and sprinkle with sea salt. Bake at 375 for 45-60 minutes until you can pierce the potato with little resistance.
