    Outback Style Baked Potato Crispy potato skin and soft and fluff insides 375 degrees F. Using a fork, carefully pierce the potatoes two to three times per side. Brush the whole potato with olive oil. This will make the skins nice and crispy. Sprinkle with sea salt. Place them directly on the middle rack of the oven. Bake for 45-60 minutes or until a fork is able to pierce the potato with little resistance. Remove from the oven and let cool for 5-10 minutes.

Brush skins with oil, and bake @ 475 for 12-15 minutes (skin side up) until crispy. Flip over, lightly salt/pepper and fill with cheese & bacon and bake for another 2+ minutes until cheese is melted. Top with sour cream & scallions.
