Crock Pot Taco Chicken Bowls | Recipe Knead 1½ lbs. chicken breasts 1 (16 oz.) jar salsa 1 (15 oz.) can black beans, drained ½ lb. (8 oz.) frozen corn 1 Tbsp chili powder ½ Tbsp cumin ½ Tbsp minced garlic ½ tsp dried oregano ¼ tsp cayenne pepper ¼ tsp salt to taste cracked pepper 2 cups dry rice 8 oz. shredded cheddar ½ bunch cilantro (optional) Directions: 1) Add everything except the rice, cheese, and cilantro to the slow cooker along with ¼ cup of water. Give everything a good stir and make sure the chicken is covered in the mixture. 2) Secure the lid on your slow cooker and cook on low for 8 hrs. 3) Near the end of the cooking time, cook the two cups of rice according to the package directions. 4) After 8 hours of cooking, carefully remove the lid of the slow cooker. Stir with a fork to shred the chicken. Build the taco bowls by placing rice on the bottom, then the taco chicken mix, shredded cheese and fresh cilantro.
Slow Cooker Taco Chicken Bowls. My notes: This was pretty good, and the apartment smelled amazing all day while it was cooking. Serving it over rice like the original recipe suggested didn't appeal to me, so we ate it as chicken tacos. They tasted great but were pretty messy and a little soggy. I also tried it as part of a taco salad. Not bad, but not as good as the tacos.

Cilantro Lime Chickpea Salad Adapted from Heather. Yield: 1-2 servings. Ingredients: * One 15-oz can chickpeas (2 cups cooked), drained and rinsed * 2 cups spinach * 1/4 cup sweet onion, chopped finely * Juice from 1.5 limes * 3/4 cup fresh Cilantro * 1/2 tsp sugar (or to taste) * 2 tsp Dijon mustard * 1 garlic clove * 1 tsp extra virgin olive oil * 1/2 tsp ground cumin * 1/2 tsp kosher salt + ground pepper Directions: 1. In a food processor, add the spinach and pulse a few times until chopped very small. Add the processed spinach, drained chickpeas, and chopped onion into a large bowl. 2. In the food processor (no need to rinse the bowl!), add the lime juice, cilantro, mustard, sugar, garlic, cumin, and oil. Process until smooth, scraping down the sides of the bowl as needed. 3. Pour the dressing on top of the spinach chickpea mixture and stir well. Add salt and pepper to taste. Let stand for about 10 minutes to let the flavours develop (optional- I didn’t!). Serve over a bed of grains, like brown rice. Serves 1-2. Note: The dressing has quite a bite to it, thanks to the lime and oil that I cut down, so please feel free to adjust the dressing to your taste buds preference! We thought it was quite refreshing and I love that it packs in spinach greens too.
Love this soup! We actually do it in the crockpot! Start with Chicken in crockpot add about a cup of water and a chicken bouillon cube and cook until chicken shreds apart and then add the rest of the ingredients. Serve with avocados, green onion and a dab of sour cream. Got to try this!
