apple and elderflower fizz ¾ cup (185ml) gin 1½ tablespoon elderflower cordial + 3 cups (750ml) sparkling apple juice 2 Granny Smith (green) apples, thinly sliced crushed ice, to serve Place the gin, cordial, apple juice, apple slices and ice in a jug and stir to combine. Serves 6.

600g green asparagus, trimmed 600g white asparagus, trimmed 2 tbsp olive oil 2 tbsp white wine vinegar 1 tsp Dijon mustard ½ tsp caster (superfine) sugar 1 clove garlic, crushed ½ c chopped tarragon salt and pepper Cook the asparagus in a large saucepan of salted boiling water for 2–3 min. Drain and place in a large bowl. Place the olive oil, vinegar, mustard, sugar, garlic, tarragon, salt and pepper in a small bowl and stir to combine. Spoon the tarragon dressing over the asparagus to serve.
