Hoppy Easter Bunny Truffles - bunny cake pops

  • Bethany Knowles

Oreo bunny truffles That’s right. Oreo’s & cream cheese. These 2 ingredients will form the bunny base. Start by pulling the cookies out of the sleeves, and toss them into a blender. A food processor would have worked better (hint hint hubby), but the blender does the trick. Blend them up until they are nice fine. Almost like a powder. Mix your oreo crumbs with your cream cheese. Use a small cookie scoop to form uniform size balls. You’ll have to roll them in you palm to get them nice & smooth. Place them onto a wax paper lined cookie sheet, and pop them into the fridge for 15-20 minutes. Or an hour if you are like me & totally lost track of time. Here comes the fun part. Gather your decorating supplies. For the bunnies I used: Toothpicks mini marshmallows pink sanding sugar heart sprinkles vanilla almond bark and blue food color (Jimmies and rainbow sprinkles were used on the plain ol’ truffles) Let’s start with a little prep work. Ideally, you could get this done right after you put your truffles in the fridge to firm up. Simply take a mini marshmallow, and squeeze it between your fingers to flatten a bit. Cut it in half with clean scissors, and dip the cut part into your sanding sugar. Voila! Two bunny ears ready to go. Keep going until you have enough for all of your bunnies. Now, to dip these can be a bit tricky. Push two truffles onto a toothpick. I learned quickly that you don’t necessarily want to push the toothpick all the way through the second one. (I’ll tell you why in a second.) Holding the toothpick, quickly dip your truffles into your melted almond bark. Let the candy coating drizzle off a bit, then place on the wax paper. Working quickly, attach the ears, nose, and tail. Once the candy coating has dried, use a toothpick and food color to add eyes. Once your candy shell has dried, gently pull out the toothpick. Now. . . This leaves some what of an awkward hole in the rear of your bunny. Simply dab a bit of melted chocolate to fill in the blank space.
