Baby Kale, Mozzarella, and Egg Bake Ingredients: 5 oz. mixed baby kale or chopped kale leaves,1-2 tsp. olive oil,1.5 c low-fat grated mozzarella cheese, 1/3 c thinly sliced green onion, 8 eggs, 1 tsp. Spike Seasoning, salt & fresh ground black pepper to taste Preheat oven to 375F/190C. Spray an 8 1/2 inch by 12 inch glass or crockery casserole dish with olive oil or nonstick spray.
Microwave Coffe Cup Scramble- 2 eggs, 2 tbsp milk, 2 tbsp cheddar cheese, and salt and pepper. 1- coat coffee cup with spray, then beat eggs and milk in coffee cup until blended. 2-Microwave on high for 45 seconds then stir. Microwave again until eggs are almost set, 30 to 45 secs longer. 3- add cheese 4- enjoy!!
