Tomato jam by Marisa | Food in Jars: used Roma tomato seconds. It took quite a bit longer than 1.5 hours to cook down, but I had it pretty low so that it wouldn't scorch. It's a tiny bit zingy and really tasty. I saw an egg sandwich with avocado that looks like a good place to use this.
