Mole is a flavorful Mexican sauce made with dried chiles and dark chocolate. The sauce is a perfect match for the grilled vegetables in this vegetarian dish.
Saute onions in 4 tablespoons butter over high heat. Cook for 5 to 7 minutes, or until dark and caramelized. Reduce heat to simmer and pour in cream. Cook for 3 to 5 minutes, or until reduced by half. Stir in blue cheese until melted. Serve steaks on generous portion of sauce.

Use a dry rub first that consists of grinded sea salt, peppercorn and montreal steak spice, Depending on the size of steak, a few drops of worcestershire sauce (to keep steak tender) and just enough extra virgin olive oil to cover the steak. Before you cook dinner, let the steak sit at room temperature, Throw it on the bbq on medium heat 5-10 minutes each side depending on thickness flipping only once. to keep the juices in! SIMPLE.
