    4.22.2013 RECIPE: coconut lime chicken: 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes 3 cloves garlic, minced 1-2 tsp curry powder 1 14 oz can light or regular coconut milk 1 4 oz. can diced green chiles Zest and juice of 1 lime 1/4 cup green onion, chopped 2 tbsp fresh cilantro, chopped (optional).....soooo good! Def needs a pinch of salt before serving. But we ate what was supposed to be the leftovers lady & the tramp style before finally putting it in the fridge - its that good!

The chicken in the soup is really easy and tasty, you just need to get a roasted chicken from the deli at your grocery store and shred it up into bite size pieces.
