Crock Pot Mexican Stuffed Bell Peppers #CSA #BellPeppers Week 2: these were really soft which made them easy to eat. They were pretty good. I used instant rice, it cooked up fine, but was a bit bland (even though I added chili powder and red pepper flakes, must add more)

Healthy Santa Fe Chicken (crock pot) 1C= 4 WW Pts+. A WINNER!!! I had 3 lbs of chicken (4 lg chicken breasts), so I made a double batch, however, I didn't double the broth or cayenne pepper. Next time my only change will be to keep the cilantro out and use it as a garnish with the green onions. We also topped this with shredded cheese and sour cream. SO YUMMY!!!
