Slow Cooker Tortilla Soup: 1lb. chicken breast; 15oz. cans whole kernel corn & diced tomatoes, drained; 5 C. chicken broth; ¾ C. onion & bell pepper, chopped; 1 serrano pepper, minced; 2 cloves garlic, minced; ¼ t. chili powder; 1½ t. salt; 1 t. pepper; Shredded cheese; Tortilla strips: Add all ingredients to slow cooker. Cook on high 4 hours or low for 8 hours. Remove chicken & shred. Return to slow cooker, stir and let simmer few minutes. Serve with tortilla chips & cheese.
Slow Cooker Chicken Enchilada Soup. I made this on the stove top and shredded the chicken after boiling it in the soup. Recipe is good. We especially liked the red peppers in it. It is similar to a creamy chicken tortilla soup without the cilantro and lime.
