Spicy Thai Noodles. Made this last night - here are some tips: 1. This calls for WAY more oil than is needed. We each had at least 2 tbsp of oil left at the bottom of our bowls. 2. Watch the oil and CRP's...really easy to burn. We had to redo this part and ended up just mixing it all together, which was easier and saved time. 3. Because of all the oil, the sauce was really thin, so we added about 1/4 cup peanut butter. Made it taste just like Phad Thai from a restaurant! 4. Served this hot, using Thai rice noodles, fried tofu, and cashews. It was delicious!

(Double the sauce per the comments) Serves 4 8 ounces dried, wide and flat rice noodles 2 tablespoons brown sugar 2 tablespoons fresh lime juice, plus wedges for serving 3 tablespoons soy sauce 1 squirt (about 1/8 teaspoon) Sriracha (optional) 2 teaspoons vegetable oil 3 scallions (green onions), white and green parts, separated and thinly sliced 1 garlic clove, minced 2 large eggs, light beaten (optional) 1/2 cup fresh cilantro 1/4 cup chopped roasted, salted peanuts 1. Soak noodles according to package instructions. Drain. 2. In a small bowl, whisk together brown sugar, lime juice, soy sauce, and Sriracha. 3. In a large nonstick skillet, heat oil over medium-high heat. 4. Add scallion whites and garlic and cook, stirring constantly, until fragrant (about 30 seconds). Add eggs and cook, scraping skillet with spatula until eggs are almost set (about 30 seconds). Transfer eggs to a plate. 5. Add noodles, scallion greens, and sauce to skillet. Cook, tossing constantly, until noodles are soft (about 1 minute). Add egg mixture and toss to coat, breaking eggs up gently. 6. Serve noodles with lime wedges, topped with cilantro and peanuts.

Penne Rosa with Shrimp, that's a Tomato Cream Sauce using Greek Yogurt - 12 ounces whole wheat penne 1 tablespoon olive oil 4 cloves garlic, minced 1 pinch crushed red pepper flakes 8 ounces button mushrooms, sliced 2 medium tomatoes (about 1/2 lb) chopped Salt and pepper, to taste 4 cups fresh spinach 10 ounces medium raw shrimp, peeled and deveined 1/2 cup marinara sauce 1/3 cup 0% plain Greek yogurt 1/4 cup grated parmesan cheese Cook penne according to package directions. Drain and set aside. In skillet with lid, heat olive oil over medium-low heat. Add in garlic and red pepper flakes, cook for 2 minutes or until garlic begins to soften. Add in mushrooms, tomatoes, salt and pepper. Cook for 5 minutes or until mushrooms begin to release their water. Turn heat up to medium-high and add in shrimp. Cook for 1-2 minutes or until shrimp are pink and opaque. Remove from heat, add in spinach and cover skillet. Let spinach wilt for 2 minutes. Remove lid and place skillet back over low heat. Add the penne, Greek yogurt and pasta sauce. Stir until sauce is mixed well and all pasta and veggies are coated. Heat until just warmed through. Divide into pasta bowls and serve topped with parmesan cheese.
