Eggs are leavening agent yes, and the protein in egg yolks provides structure, but you should always follow your recipe. If it's a good recipe will already have worked out how much egg you need in conjunction with other leavening ingredients. Adjusting ingredients outside of flavoring and color can ruin your cake.If you dislike the way a recipe works you should find a new recipe not add or decrease eggs. You may end up with awesome or you may end up with cake batter oozed all over your oven.
